Howdy all. Christmas Day 2025. Blah outside, but a wonderful day indoors.
A “selfie” from in front of the fireplace. Except, I don’t have a fireplace like that, nor a tree like that, nor a Christmas sweater like that one, and my skin looks less clear than that. ChatGPT is a wonderful tool You’d almost think it was real.

I tried to do a “prime” rib roast for dinner. It was an expensive cut of beef for sure. Anyway, I read the many ways to burn it online and decided to do this version.
The day before, I caked the beef in kosher salt to draw out whatever bad spirits were within it. And this morning, I rinsed it all off again, and drained the fluids from the bottom of the container, and dried it off. Then I “encrusted” the beef with a prime rib rub and let it sit out catching bacteria for an hour or two.
Instead of a metal rack, I used a rack of baby potatoes and carrots.
Then into the roaster oven for about 15 minutes at 500 Fahrenheit. Don’t know what that is in Celcius, but in my oven that is all she’s got Jim.
At that point the temperature is dropped to about 325 for 12-15 minutes per pound. I’d say it was closer to the 12 minutes for mine, and it was pulled with an internal temperature just around 125 Fahrenheit. Supposedly that would be medium rare, after sitting for 25-30 minutes when it will slowly reach 130-135.
Certainly a touch of pink was left. Looks nice.
For me, too much “encrusting”, and not enough trimming of what I hoped would be melting fat. Even though I trimmed a lot of tough fat/skin stuff off of the top, there was still a layer of rubber. Carrots were perfect. Potatoes okay.
The prime roast itself was super tender, other than the outer edge (quarter inch all around). Very tasty meat.
For the future, I’d cut down on both the time in salt, and the amount of prime rib rub mix. And maybe shoot for 120 degrees instead of 125 internal temperature when removing it from oven. And certainly put some sort of “sauce” 1/2 way up the potatoes so they cook more.
I’ve had my fill, and Kitty had a teeny amount of the beef after it was rinsed. Now it has been totally rinsed and is wrapped in foil in the fridge. The taters/carrots are in a sealed bowl that will get used in soup.
I may not be a good chef, but with a good meal over, I can Enjoy Life
